The heart, liver, and gizzard of a turkey. If your roasting a turkey on Thanksgiving, and if you get that turkey from a grocery store or a butcher, then the birds insides will probably be in a bag with the guts of the turkey called giblets (“jib-lets”). Cooks usually use the turkey's giblets to make gravy. They take them out of the bag and save the giblets before they stick the turkey in the oven. Also in that bag or in a separate bag you will find a turkey neck. Cooks will also use the turkey neck to make gravy.
